Summer Chickpea Salad

 

This is one of my very favorite recipes, especially in the summer when almost all the ingredients can be picked up at my local farmer’s market. Full disclosure, this is not my own recipe, but reblogged from one of my very fav food blogs, How Sweet Eats. Jessica recommends the salad be enjoyed on bread but I love it so much, I eat it as a lunch salad by itself. It also maintains extremely well in the fridge as I usually make it on Sunday & enjoy throughout the week.

Summer Chickpea Salad with Honey Garlic Lime Vinaigrette

yields: serves about 4                          total time: 30 minutes

What You’ll Need: 

3 cups chickpeas (or 2 (15-ounce) cans, drained and rinsed)
4 green onions, thinly sliced
2-3 ears grilled corn, cut from the cob
1 pint cherry tomatoes, quartered
3 tablespoons chopped fresh basil
2 tablespoons fresh chives
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 1/2 tablespoons honey
3 garlic cloves, minced or pressed
1 lime, juiced and zested

The How To:

In a large bowl, combine the chickpeas, onions, corn, tomatoes, basil and chives. Toss well with the salt and pepper. Separately, in a small saucepan, add the oil, vinegar, honey, garlic, lime juice and zest. Heat over low heat and whisk until the mixture is warm and garlic cloves are sizzling a bit.Pour the liquid over the chickpeas and and toss well to coat. Cover with a piece of plastic wrap and refrigerate for at least 30 minutes before serving.

Major Life Updates

June was quite a month for me.

I celebrated my twenty- eighth birthday just a day after my last post with a fun night out starting at one of my favorite restaurants in NYC, When We Were Young. The food, cocktails & company couldn’t be topped. Their signature drink, the While We Were Young, is as beautiful as it delicious.

I wore my favorite summer romper from Express.

A few days after my birthday, I started a new job that allows me to pursue my passions inside & outside the office. That being said, I’m happy to have some time back to keep content flowing across the pages of Bliss & Bellinis. Leaving my old job wasn’t the easiest. I enjoyed my clients, my boss & the people I worked with but job-wise, sometimes you have to look beyond the here & now and set yourself up to work in a space that you’re truly passionate about.

A few weeks after that, Dave & I headed home to Cleveland to celebrate my birthday with my best friends & family. Unbeknownst to me, Dave had bigger plans. While in Cleveland, Dave proposed at my very favorite place in the world and coincidentally where we had our first date, The Cleveland Museum of Art.

After a big glass of champagne, we went to meet up with my parents to celebrate. To my surprise, Dave, and our families, had arranged a surprise engagement party at my parent’s home with our closest friends and family… which all kicked off with what else but a bellini toast. I’m not afraid to admit it but I think my summer peaked early this year. Needless to say, I’m 100% OK with it.

In my downtime, I’ve been trying to spend as much time as I can at the club or on a sailboat, which was a perfect way to welcome the summer solstice.

As well as gallivanting around the city a little bit, too. Smorgasburg is one of my favorite activities. Recently, I FINALLY got to try the infamous Ramen Burger— which totally lived up to it’s reputation. Delicious. 

Trying to soak in as much East Coast sun as I can but I have a lot of upcoming travel to look forward to. On a totally unrelated note, is everyone gearing up for the Nordstrom Anniversary Sale? I am counting down the days!

Three Thrills by Thursday

  1. Summer Reading- remember getting assigned books over the summer in middle school? I was never too excited about being forced to read during my summer vacation but now I can’t wait. Funny how that works. My parents sent a surprise package a few weeks ago with some of New York Times Bestsellers and I can’t wait to dive into these reads.
  2. Summer Writing- I am SO excited to share my Cuba travel guide with you next week. As I started writing, I realized I had so many details I wanted to share with you so I’ve decided to break it up into a small series.

Summer Statement Earrings

Earring wise, you could say I’m a minimalist. Due to bad piercing job (thanks Claire’s — circa 1999), I’ve pretty much stuck to studs my whole life. You could also say I have major earring FOMO. I’m always gifting statement earrings mostly because I can’t buy them for myself!

Rabbit, Rabbit!

Happy Thursday, babes & first day of September!

I hope you’ve had a quick week and are prepping for this nice long weekend ahead. I’m headed to Mexico to celebrate one of my best friends on her bachelorette trip. I. can’t. wait.

My thrills this week are a little overshadowed by my trip to the Museum of Ice Cream. This attraction has taken social media by storm and upon opening, sold out in just 3 short days. I got tickets back in June and had been counting down the days until last Monday. The museum is comparable to Willy Wonka’s Chocolate Factory with a chocolate room, edible helium balloons, giant sprinkle pool and even a magic pill that turns a lemon slice sweet. It was so magical and I wish I was still laying in the sprinkle pool while writing this.

Secondly, I wanted to shared one of my favorite Instagram accounts to follow. Have you ever needed a few minutes to clear your head at work and wished you were elsewhere? Follow @graymalin! His photos are stunningly beautiful and transport you anywhere from the Amalfi Coast to a very bubbly bottle of champagne. His website also has incredible photos which make phenomenal phone screen savers.

Finally, a few days ago Emily Schuman of Cupcakes and Cashmere posted the best food instagrams to follow. Check these out, they look pretty delish. I also LOVE How Sweet Eats.

Catching Up

Does anyone else feel like the summer is flying by? I feel as if I need to invite summer over for cocktails & a cheese board and kindly mention that she’s moving way too fast. I can’t believe it’s already June! I’ve started logging a few pool hours, celebrated my birthday and even managed to surprise one of my best friends to celebrate hers.
