Lemon Pound Loaf

 This Lemon Pound Loaf- O M G. This may be my favorite baked good I’ve made this year and that’s saying something… It’s a pound cake style loaf but still light & soft. It will knock your socks off and if you’re wanting to go a different route instead of delivering Christmas cookies to your neighbors this year, this recipe is IT!

What You’ll Need:

3 eggs
1 cup sugar
8oz greek yogurt
1/2 cup vegetable oil
2 teaspoons lemon zest
2 tablespoons lemon extract
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt

Glaze:
lemon juice
powdered sugar

The How To:

  1. Preheat the oven to 350° F and grease/ flour your loaf pan
  2. In a bowl, mix eggs, sugar and greek yogurt with a whisk
  3. Add oil and continue to whisk
  4. Add remaining ingredients and mix to combine
  5. Transfer mixture to the loaf pan and bake for approximately 50 mins
  6. While baking, mix powered sugar and lemon juice to make the lemon glaze. Start with 2 tablespoons of lemon juice in 1/3 cup powdered sugar. Add more liquid for a thinner glaze and add more powdered sugar for a thicker glaze
  7. Once the loaf is done baking, let it cool for 30 minutes prior to removing from the pan
  8. Once completely cool, pour glaze over loaf and serve
  9. Enjoy!
