Brunch Sandwich

My breakfast routine usually consists of a smoothie or small bowl of oatmeal but when Prince Charming is in town, he’s usually ready for a heartier breakfast. This particular sandwich is delicious and will keep you full well into lunch time. It feels gourmet without all the stress and is able to be mastered by any level of chef.

 

 

Ingredients:

– sandwich bread–I use Ezekiel Sprouted Grain bread
– 2 slices of prosciutto
– 4-6 slices of salami
– a slice of red onion (soak in water during preparation for less of a harsh bite)
– 3-4 basil leaves
– 2 slices of mozzarella cheese
– 1 egg

Directions:

1. Fry 4-6 slices of salami in a skillet over low heat until lightly crisp
2.  Place mozzarella and prosciutto on the bread. After the salami is fried, place the slices on top of the prosciutto and cheese
3. In the same pan you’ve fried the salami, fry an egg sunny side up and place onto a separate plate
4. Add the red onion and place the other piece of bread on top to complete the sandwich
5. Carefully place the sandwich in the skillet to toast then flip to toast the other side as well
6. Open the sandwich up and add the basil and fried egg (I like to nestle it right in between everything so the yolk breaks inside the sandwich instead of running out of the sides)
7. Enjoy!

If you try this, I promise you’ll be hooked! A breakfast sandwich that will make you feel like you’re at a luxury brunch while in your own place (add a little bubbly, too!)
