Happy Monday, friends! I hope everyone had a wonderful weekend. It was fairly dreary here (Ohio–surprise, surprise) but I took advantage of the rain as an opportunity to rest up after my marathon of week last week.
The recipe today is great because not only is it a perfect sized bite of sweet, its great for an energy boost. Plus, it’s quick- no baking involved! Think of one of those Chewy granola bars… but better!
Ingredients:
1/2 cup creamy peanut butter
1/3 cup honey
1 tsp vanilla extract
1 cup old-fashioned raw oats
1/2 cup ground golden flaxseed meal
2/3 cup sweetened shredded coconut, toasted and cooled**
chocolate chips (up to you)
** To toast the shredded coconut, just place on a baking sheet and bake at 350 for about 10 minutes, stirring occasionally.
1. Combine the peanut butter, vanilla extract and honey and stir.
2. Add your oats, flaxseed meal and cooled coconut and mix. You can choose to add the chocolate chips here as well, I just like to push them in as I’m forming the bites.
3. Once it’s all mixed together, let it cool in the refrigerator.
4. After the mixture’s cooled, form into small bites. I’m not a huge fan of packing these with chocolate chips, so I just pressed 1 or 2 into each bite.
